Crockpot Risotto

1 1/4 cup uncooked Arborio rice

1/4 cup olive oil

1/4 cup dry white wine

3 3/4 cup chicken broth

3 cloves garlic, minced

Optional: sliced mushrooms

2/3 cup grated Parmesan cheese


Put rice and olive oil in crockpot, toss to coat. Add all other ingredients except Parmesan. Cook on high for 1 hour, 45 min or until most liquid is absorbed. Stir in Parmesan.


Note: start watching it at 1 1/2 hour, you don’t want it to dry out
