
-6-8 bell peppers
-1.5 lbs. grass fed ground beef
-1/2 cup chopped onion
-1 tsp. Chopped onion
-1 tsp. Dried sage
-1 tsp. Dried thyme
-2 tsp. Salt
-1/2 cup can diced tomatoes
-1/2 cup riced cauliflower
-1 cup shredded aged cheddar
-preheat oven to 450 degrees
-brown beef and onions
-add garlic, tomatoes, cauliflower and seasoning
-remove tops and seeds from peppers
-fill peppers with beef mixture and place standing in a cast iron skillet or pot
-cover and bake 40-45 minutes
-uncover , add cheddar, bake for an additional 10 minutes
-garnish with parsley and sour cream
